HELP! My ipod touch had ALL of my memory erased?

All you have to do is go to itunes and click buy. If you have already bought them itunes will say something like "you have already purchased this app" and it will start downloading it for you for free. This only works for apps. If you lost music or anything you will have to buy the songs again or get them from an alternate source.
